GIN, TONIC AND POMEGRANATE

Franciacorta, Prestige, Brut, Ca’del Bosco, Italy

  • 2 tbsp gin
  • 4 tbsp tonic
  • Zest of half a lemon
  • Seeds and juice from 1 pomegranate
  • Chopped mint leaves

Mix together gin, tonic, lemon and pomegranate juice. Garnish with zest, pomegranate seeds and mint leaves.


BIÈRITA

Champagne, Brut, Piper Heidsieck, France

  • 1 tbsp tequila
  • ¼ tbsp of triple sec
  • 1 tbsp any ale
  • ¼ tbsp orange juice
  • 1 tbsp lemonade
  • Zest and juice of 1 lime
  • Pinch of salt

Mix all ingredients except for zest and salt. Freeze for 2 hours. Scrape the frozen oysters and garnish with some salt and zest.


APPLE MARTINI

  • ½ tbsp green apple vodka
  • Zest and juice of half a lemon
  • Pinch of cinnamon
  • ½ apple cut in small cubes
  • Micro-greens (to taste) for garnish

Mix together Jack Daniels, vodka, lemon juice and cinnamon. Garnish with apple zest and micro-greens.


SANGRIA-MIGNONNE

Champagne Rosé, Brut, Laurent Perrier, France

  • 4 tbsp raspberry vinegar
  • 2 tbsp Grand Marnier
  • Zest and juice of 1 clementine
  • Salt and pepper
  • 2 French shallots

Mix all ingredients, garnish with clementine zest.

  • 1-3 drops of Tabasco (to taste)
  • 2 drops of Worcestershire sauce
  • Pinch of celery salt

Mix all ingredients and garnish with lime zest.


MAPLE DAIQUIRI
